Growing up

What do you do when you wake up on Monday with a hankering for pancakes (a.k.a., a “pankering.”) but there is no pancake mix to be found in the house?

Well, once you have gotten over your shock and disappointment, figure out what people did in the olden days before pancake mix was invented. We do this with the aid of Fannie Merritt Farmer.

This lady is a hero in our kitchen.

Apparently what they did was whip up some griddle cakes.

So that’s what Miss Ellie did.

Then she had a great idea!

“Daddy, you know what we should do? We should put sausage in the pancakes and make them into sausage pancakes!”

I said, “You know, I used to do that all the time, when you were smaller, but you hated that and would never eat it willingly, so I stopped doing that. I haven’t done it in a while.”

Without skipping a beat, and with totally deadpan delivery she responded, “I have ruined my life and there is nothing I can do about it now.”

Did I mention she has a flare for the (melo)dramatic?

And finishes his Number Skills mathbook!

Fired up by this success he pushed on and finished his reading book too! “Dad, now I can burn this book!”

No love lost between him and his school books. School books involve sitting still, something Seppi never does if he can help, unless he is fast asleep.

The great thing about having leftover or canned broth, or especially the leek and potato soup base, is that it is very quick and easy to make a delicious and nutritious soup. Simply choose your meat, choose your veggie, saute them together, and then dump in the broth.

Let’s just say, mixed reviews.

Don’t you just hate it when your salvaged fence scraps are 15 feet short?

Evie turned 11 this week. To celebrate her birthday we had some snow, for the first time all winter.

This made her day because she has been praying for snow in our night prayers almost daily since September.

Our newly minted 11-year-old! I can’t believe it has been 11 years.
