Jerusha the Jerusalem Artichoke

Forgot to post these a few weeks back. I should really try to get out to the back of the field to see how she’s doing.

Looking a little droopy after we watered her in, but hopefull she’s looking up now.

Jerusalem artichoke is a perennial tuber which produces roots high in a form of starch that is edible to humans. When grown to maturity they can be harvested for food, and if harvested judiciously, can leave the plants alive to grow more tubers. The leaves are highly attractive to deer (hence the cage) which might be helpful later on…

Like I said, Seppi and I planted this little beauty a few weeks ago and left her to flourish or wilt on her own.

Around here, we don’t have much use for plants or animals that don’t have a strong will to live.
