Old Time Farmer Food

You know the best part of doing old time farm work?

It is awesome.

The second best part?

You get to see the sun rise on a regular basis.

The third best part?

You get to eat like an old time farmer.

Seriously, I tell my patients all the time, “You can eat like an old time farmer and be perfectly healthy, but you have to be working like an old time farmer.”

So here is an old time farmer breakfast. Start with four slices of home grown pork belly, and saute’ it in it’s own fat (of which there is plenty) with a medium sized onion.

When pork belly is browned and onion is caramelized, pour in all the leftover mashed potatoes from Thanksgiving. This should be about 3 or four cups, and should be made with cream cheese and heavy cream.

Add a half cup of shredded cheese just to make sure…

And stir until thoroughly browned, but not burned. You’ll get brown crusties on the sides and bottom of the pan. Scrape these off and stir them back into the mix, they are delicious.

PSA, I only at about a third of this, the rest will make breakfast on Monday and Tuesday.

Eat with a side of leftover Swiss Apple Pie from Thanksgiving. Then get outside and get back to work!
