We harvested one of the Georgia candy roaster hubbard squashes a few weeks back, just to try it out. It has been sitting in the garage ever since because we have not had an opportunity to cook it. It is rather a large squash and we didn’t want 10 LBs of leftovers.

It’s almost as big as Seppi!
Fortunately Uncle Adam hosted Lord’s Day at the farm last night, so we finally had an opportunity to roast the whole thing.

Sliced in half and ready for seasoning. It was too big for the pan, and almost too big for the oven.

Didn’t steam as swiftly as a butternut or acorn squash, but we were able to get it chunked and mashed by sheer force of arms.

Spread olive oil and honey on top of it, and bake it again…

Then top with brown sugar and walnuts and bake again, and…
